In a 4-quart or larger slow-cooker pot, combine the beef, onion, flour, garlic, 1/4 tsp chipotle, cumin, oregano and salt.
With a spoon or clean hands toss to coat the meat evenly.
Add the coffee, canned tomatoes, and chopped up carrots and celery. Stir to blend.
Cover and cook on the high setting for 3 hours, or until the meat is fork-tender.
Taste and add up to 1/4 tsp chipotle if desired.
