Heat a grilling pan over medium heat with cooking spray.
Combine the salt & pepper and spices in a bowl and toss the shrimp in the bowl to coat. Place the shrimp on the grill pan. Cook 2-3 minutes on each side until opaque. Pro tip: remove shrimp 30 minutes from refrigerator prior to cooking.
Remove shrimp from the grill and set aside to rest while you assemble the salad.
Assemble the salad by adding all the vegetable ingredients first to a bowl.
Top salad with shrimp, feta and drizzle with dressing.
