1lb boneless, skinless chicken breastcut crosswise into 1/2 inch strips
1tbspfresh gingerminced and peeled
1cup broccolicut into florets
1/4cup water
1/2cuplow sodium chicken brother
1/4cup orange juice
3tbspreduced sodium soy sauce
1tspcorn starch
1tbsp water
1orangepeeled and sectioned
Instructions
Heat oil in a nonstick skillet over medium-high heat. Add chicken and cook for 3 minutes.
Add ginger and cook for 2 more minutes or until the chicken is cooked through.
Transfer to a plate and set aside.
In the same skillet, add broccoli and 1/4 cup water, stirring to scrape up the browned bits from the bottom of the pan. Cover and cook until the broccoli is tender-crisp, 3-4 minutes.
Return chicken back to the skillet. Stir in chicken broth, orange juice, and soy sauce. Mix cornstarch with 1 tablespoon water, add to the pan and cook, stirring frequently, until the sauce comes to a boil and thickens slightly.
Add orange sections and cook until heated through.
