Preheat the oven to 400 F
Mix together the spices for the chicken and cover chicken completely
Spray a baking tray with low calorie spray and place the chicken on to the tray, spray with some more and place in oven.
Bake for 25 minutes or until cooked through
Meanwhile, fry the onion and garlic for the sauce in cooking spray until the onions become translucent
Add diced peppers along with spices and fry until the peppers are softened
Add the chopped tomatoes, coriander and chicken stock, and season to your taste
Cover and cook for 20 minutes on medium heat, then uncover and cook for 10 minutes on high heat
Remove the chicken from the oven and shred using Bear Claws (or 2 forks)
Add chicken to chili sauce and stir until totally combined
Serve with a sprinkling of coriander
