Low Carb Mini Salmon Cakes
Ingredients
- 2 1/4 cups Cooked Salmon
- 1/4 cup Sweet Potato Mashed or Sweet Potato
- 4 Green Onions Chopped
- 1 tbsp Fresh Parsley Chopped
- 1 tbsp Dijon Mustard
- 1 tbsp Lemon Zest
- 1 tbsp Lemon Juice
- 3 tbsp Capers Drained
- 1 Egg Beaten
- 3/4 tsp Sea Salt
- 1/2 tsp Black Pepper
- Lemon Wedges For Serving
- 1/4 cup Walden Farms Dressing for Dipping - Sweet Onion or Chipotle Ranch
Instructions
- Preheat the oven to 350°/180°C
- In a large mixing bowl, add all of the salmon cake ingredients. Mix everything together with a fork until combined.
- Form mini patties, about 3 inches in diameter (try to make 9 equal size pieces) and place on the baking tray.
- Bake for 25-30 minutes or until firm and browned on the sides. Make sure to flip the patties over in the oven halfway through cook time.We like Walden Farms Dressing for dipping! Sweet Onion or Chipotle Ranch are fabulous options.
