Greek Salad with Shrimp
Ingredients
- 1/4 lb shrimp
- 3 cups romaine lettuce (chopped)
- 1/2 cup cucumber (diced)
- 1/4 cup grape tomatoes
- 1/2 cup green bell pepper (diced)
- 2 tbsp Walden Farms 0-Calorie Balsamic Vinaigrette Dressing
- 1/4 tsp marjoram
- 1/4 tsp basil
- 1/2 tsp oregano
- 1/2 tsp salt & pepper (to taste)
- 1 tbsp pressed cottage cheese
Instructions
- Heat a grilling pan over medium heat with cooking spray.
- Combine the salt & pepper and spices in a bowl and toss the shrimp in the bowl to coat. Place the shrimp on the grill pan. Cook 2-3 minutes on each side until opaque. Pro tip: remove shrimp 30 minutes from refrigerator prior to cooking.
- Remove shrimp from the grill and set aside to rest while you assemble the salad.
- Assemble the salad by adding all the vegetable ingredients first to a bowl.
- Top salad with shrimp, feta and drizzle with dressing.
