Greek Salad with Shrimp

Ingredients
  

  • 1/4 lb shrimp
  • 3 cups romaine lettuce (chopped)
  • 1/2 cup cucumber (diced)
  • 1/4 cup grape tomatoes
  • 1/2 cup green bell pepper (diced)
  • 2 tbsp Walden Farms 0-Calorie Balsamic Vinaigrette Dressing
  • 1/4 tsp marjoram
  • 1/4 tsp basil
  • 1/2 tsp oregano
  • 1/2 tsp salt & pepper (to taste)
  • 1 tbsp pressed cottage cheese

Instructions
 

  • Heat a grilling pan over medium heat with cooking spray.
  • Combine the salt & pepper and spices in a bowl and toss the shrimp in the bowl to coat. Place the shrimp on the grill pan. Cook 2-3 minutes on each side until opaque. Pro tip: remove shrimp 30 minutes from refrigerator prior to cooking.
  • Remove shrimp from the grill and set aside to rest while you assemble the salad.
  • Assemble the salad by adding all the vegetable ingredients first to a bowl.
  • Top salad with shrimp, feta and drizzle with dressing.
