Creamy Smoked Salmon Scramble with Dill
Ingredients
- 1 tsp unsalted butter
- 2 eggs (large)
- 4 egg whites (large, lightly beaten)
- 2 tbsp cream cheese (low-fat)
- 4 oz. smoked salmon (sliced)
- 2 tbsp fresh dill (chopped)
- 1/2 tsp salt & pepper (to taste)
Instructions
- Melt butter in a small, nonstick skillet over medium heat.
- Add eggs and cream cheese, cook 2 to 3 minutes until almost set.
- Fold in salmon and dill and cook 1 minute more.
- Season with salt and pepper to taste. Split into 2 even portions & serve hot.
