Creamy Smoked Salmon Scramble with Dill

Ingredients
  

  • 1 tsp unsalted butter
  • 2 eggs (large)
  • 4 egg whites (large, lightly beaten)
  • 2 tbsp cream cheese (low-fat)
  • 4 oz. smoked salmon (sliced)
  • 2 tbsp fresh dill (chopped)
  • 1/2 tsp salt & pepper (to taste)

Instructions
 

  • Melt butter in a small, nonstick skillet over medium heat. 
  • Add eggs and cream cheese, cook 2 to 3 minutes until almost set.
  • Fold in salmon and dill and cook 1 minute more.
  • Season with salt and pepper to taste. Split into 2 even portions & serve hot.
