Low Carb Chili Chicken
Ingredients
- For Chicken:
- 800 g Boneless skinless chicken breasts approx.. 3 breasts
- 2 tsp Ground cumin
- 1 tsp Paprika
- 1 tsp Chili powder
- 1 tsp Ground coriander
- 1 tsp Garlic powder
- Low calorie cooking spray
- For Chili Sauce:
- 1 Large onion diced
- 2 cloves Garlic minced
- 3 Jalapeno peppers (or Red peppers if you prefer less heat) diced
- 2 tsp Ground cumin
- 1 tsp Paprika
- 1 tsp Chili powder
- 1/2 tsp Garlic powder
- 1 tin Tomatoes
- 1/2 pint Chicken stock
- Salt & pepper to taste
- 20 g Fresh coriander chopped
- Low calorie cooking spray
Instructions
- Preheat the oven to 400 F
- Mix together the spices for the chicken and cover chicken completely
- Spray a baking tray with low calorie spray and place the chicken on to the tray, spray with some more and place in oven.
- Bake for 25 minutes or until cooked through
- Meanwhile, fry the onion and garlic for the sauce in cooking spray until the onions become translucent
- Add diced peppers along with spices and fry until the peppers are softened
- Add the chopped tomatoes, coriander and chicken stock, and season to your taste
- Cover and cook for 20 minutes on medium heat, then uncover and cook for 10 minutes on high heat
- Remove the chicken from the oven and shred using Bear Claws (or 2 forks)
- Add chicken to chili sauce and stir until totally combined
- Serve with a sprinkling of coriander
