High Protein Chocolate Lava Cake

Ingredients
  

  • 1 Double Chocolate Chunk Quest Bar®
  • 1/2 scoop Chocolate Protein Powder
  • 1/2 cup Almond Milk Unsweetened Vanilla
  • 2 tbsp Almond Meal
  • 1 tbsp Sugar Free Chocolate Chips
  • 1/2 tbsp Cocoa Powder
  • 2 tbsp Zero Calorie Sweetener
  • 1 Egg White Lightly Beaten
  • 1/2 tsp Vanilla Extract
  • 1/4 tsp Baking Powder
  • a pinch Salt
  • Non-Stick Cooking Spray

Instructions
 

  • Preheat oven to 350°F.
  • Break Quest Bar® into small pieces.
  • In a medium microwave-safe bowl, add Quest Bar® pieces and almond milk. Microwave for 1 minute. Stir. Return to microwave for 30 to 40 seconds. Stir until smooth.
  • Stir in Protein Powder, almond meal, chocolate chips, butter, and cocoa powder. Add sweetener, egg white, vanilla extract, baking powder, and salt. Mix well.
  • Spray two 4-inch ramekins with nonstick cooking spray. Pour the batter evenly into each ramekin. Bake for 16 to 17 minutes.
  • Remove from oven and let cool for 5 minutes. Carefully run a knife around the edge of each ramekin to loosen. Flip upside down onto a plate.
    Serve immediately.
