High Protein Chocolate Lava Cake
Ingredients
- 1 Double Chocolate Chunk Quest Bar®
- 1/2 scoop Chocolate Protein Powder
- 1/2 cup Almond Milk Unsweetened Vanilla
- 2 tbsp Almond Meal
- 1 tbsp Sugar Free Chocolate Chips
- 1/2 tbsp Cocoa Powder
- 2 tbsp Zero Calorie Sweetener
- 1 Egg White Lightly Beaten
- 1/2 tsp Vanilla Extract
- 1/4 tsp Baking Powder
- a pinch Salt
- Non-Stick Cooking Spray
Instructions
- Preheat oven to 350°F.
- Break Quest Bar® into small pieces.
- In a medium microwave-safe bowl, add Quest Bar® pieces and almond milk. Microwave for 1 minute. Stir. Return to microwave for 30 to 40 seconds. Stir until smooth.
- Stir in Protein Powder, almond meal, chocolate chips, butter, and cocoa powder. Add sweetener, egg white, vanilla extract, baking powder, and salt. Mix well.
- Spray two 4-inch ramekins with nonstick cooking spray. Pour the batter evenly into each ramekin. Bake for 16 to 17 minutes.
- Remove from oven and let cool for 5 minutes. Carefully run a knife around the edge of each ramekin to loosen. Flip upside down onto a plate. Serve immediately.
