Ingredients
  

  • 1 1/2 lbs lean cubed beef (use a lean cut like flank steak)
  • 1/2 cup sliced onion
  • 2 tbsp flour
  • 1 tbsp minced garlic
  • 1/2 tsp ground chipotle
  • 1/4 tsp ground cumin
  • 1/4 tsp oregano
  • 1/4 tsp salt
  • 1/2 cup strong brewed coffee
  • 1/2 cup canned tomatoes
  • 1 carrot
  • 1 celery stalk
  • fresh cilantro *optional

Instructions
 

  • In a 4-quart or larger slow-cooker pot, combine the beef, onion, flour, garlic, 1/4 tsp chipotle, cumin, oregano and salt.
  • With a spoon or clean hands toss to coat the meat evenly.
  • Add the coffee, canned tomatoes, and chopped up carrots and celery. Stir to blend.
  • Cover and cook on the high setting for 3 hours, or until the meat is fork-tender.
  • Taste and add up to 1/4 tsp chipotle if desired.
  • Optional - garnish with cilantro
