Low Carb Beef Stew
Ingredients
- 1 1/2 lbs lean cubed beef (use a lean cut like flank steak)
- 1/2 cup sliced onion
- 2 tbsp flour
- 1 tbsp minced garlic
- 1/2 tsp ground chipotle
- 1/4 tsp ground cumin
- 1/4 tsp oregano
- 1/4 tsp salt
- 1/2 cup strong brewed coffee
- 1/2 cup canned tomatoes
- 1 carrot
- 1 celery stalk
- fresh cilantro *optional
Instructions
- In a 4-quart or larger slow-cooker pot, combine the beef, onion, flour, garlic, 1/4 tsp chipotle, cumin, oregano and salt.
- With a spoon or clean hands toss to coat the meat evenly.
- Add the coffee, canned tomatoes, and chopped up carrots and celery. Stir to blend.
- Cover and cook on the high setting for 3 hours, or until the meat is fork-tender.
- Taste and add up to 1/4 tsp chipotle if desired.
- Optional - garnish with cilantro
